I'm not feeling the world today...


Maybe today was a waste of a day, but right from waking up I just had a feeling that I wanted to back in bed - dreaming the day by. I have these days a few times a month, where I have no motivation or drive to even get changed and I just ache. It's not that I'm down or sad - just that I need a day off from life. I considered having a day off of blogging, but then I just thought that I'd be real with you all - I'm sure I'm not the only one. It's not like I feel bound to put up a post every single day, I just enjoy it and the interaction that I can have.

That being said, I did force myself to do something. I went to the shops and got supplies to make my delicious brownies again (here's the blog post about them). My house is filled with the smell of baking and that's made me feel a lot more chirpy. I think there's something so very important about giving yourself time and allowing yourself to have days where you don't feel your best. It doesn't mean that you're depressed, it just means that you're not forcing yourself to be happy everyday, you're being real and true to your emotions.

I know that this weekend is jam-packed with family and friends, so that's giving me a lot to look forward to. In my opinion, it's how you deal with these kind of days that determine how strong you are. You don't have to "get over it", or "snap out of it", all you need to do is remember that there's always tomorrow, and you'll wake up being ready to face the day. Maybe not quite so bright-eyed and bushy tailed - not until a morning coffee anyway!

Rainy day baking: Nigella's Everyday Brownies with white chocolate and caramel

I'm putting it out there that these are the best brownies that I have ever made/eaten. That's a very bold statement, I know. But if you try this then you'll agree with me - I promise! I cannot take credit for a single ounce of this recipe though, it comes from a fellow blogger. Rosie from Cider With Rosie, who got it from a Nigella Lawson cookbook. 

As Rosie says, it's a completely foolproof recipe that takes such a short amount of time to make and bake - minimal washing up too which is always a big bonus in my eyes. They are perfectly gooey and moist (what a word... MOIST!), highly indulgent and really don't cost that much to make. 

I'll leave a link here to the full recipe and how to do it, as her blog is just too beautiful not to look at. The only thing I did differently was putting the Galaxy bar on after all the mixture was in the tray - it turned out exactly the same and just made it easier for me.

Whilst buying the chocolate yesterday in Tesco I was told by the lady at the checkout to try toblerone in a brownie, so that'll be my next mission. 

I wish that I could have taken beautiful "how-to" pictures, but unfortunately I tend to leave a bit of a whirlwind in the kitchen...
